We have only ever taken the pink card and the paper documentation that goes with it. But remember you will need to take your insurance documents and notification you are the owner.

I only have a green paper licence and it has always been accepted by car hire companies in Spain.
Getting old is not much fun, but it is a lot better than the alternative

I used to use an international driving license, as it serves several purposes. Since it has a photo, it can be used as a valid photo ID (very important when using credit cards in Spain and elsewhere in Europe). This means that my passport could be locked away safely and if I lost the license it doesn't matter. Loose your passport and it spoils your holiday.

Why not get the 'EU standard' photo card license? No need to worry about it then.

The answer is yes. The original PINK paper licence does not meet the requirements (especially photo) of some countries so an IDP is advisable.
The ones you list should accept a pink licence but Italy can be a problem.
It is a International Driving Permit not a licence and a licence is still required to be carried with the IDP
