Monday nights dinner

just a simple dish but very yummy
serves 4
(Syns in cheese but thats optionally added at end, so you dont need it, but any family members not doing sw might like it)

2 tins of tomatoes
1 onion chopped/diced
3 Romero peppers (despite what these look like they are not chillies, just very sweet peppers) chunked up
3 chicken breasts diced
chicken stock (I used about 1/2 pint)
1 tablespoon paprika
1/2 teaspoon black pepper
Cayenne pepper - to taste - I used about 1/2 teaspoon
1/2 teaspoon dried coriander

Put all the ingredients in a oven proof dish and bake for about one and half hours at 160C/gas mark 3/350f

We served with plain boiled rice

with just a little cheese on top, grated on

been looking for good slimming world bearnaise sauce

I was really pleased to find this recipe and tried it tonight, was lovely however, I would put less mustard in and less wine vinegar

Had it with chicken roasted inside a roasting bag keeps it juicy, slimming world chips and salad

also I didnt have fresh tarragon, so used dried, 1 teaspoon replaces 1 tablespoon of fresh

Also I didnt have a stainless steel bowl, so used a saucepan over another larger saucepan

mustard is 1/2 syns per teaspoon, and white wine vinegar is free , so very little syns

salad nicoise

some syns in this just a few in the anchovies (as they are nearly always tinned in oil) drain them though
and some syns in the olives (25g or 8 olives 1 syn)

boil some new potatoes or salad potatoes and cube, and cool
mix in
cherry tomatoes
green beans
tin of tuna (in brine is free)
red onion chopped up
the anchovies chopped up
olives

normally i would use really good olive oil but I have found the Hellmans vinaigrette very good (thanks to Gail and Jim for introducing me to it and thats free)

You can use fresh garlic crushed in too

My version of Goulash

first dissolve a stock cube with hot water, about 1/2 pint
mix in a tin of chopped tomatoes
smoked paprika
black pepper
tomato puree
sliced carrots
chopped onion
braised beef cubes
cubes of potatoes

bake in the oven for an hour and half at about 160F/325C/Gas Mark 4

replacing breadcrumbs with cous cous

I tried again with cous cous instead of breadcrumbs for covering food
This time on pork chops but Im going to try on chicken, rolled in egg then the mix

Much better if you use cous cous straight out of the bag, mix it with the herbs and spices

I used
cayenne pepper
smoked paprika
cumin
coriander
garlic salt
black pepper
cous cous

shook it all in a bag and spooned it over pork chops, placed on a baking sheet, nothing added in the way of oil or anything

at 200C/400F/gas mark 6 for about 20 -25 minutes

up to you which spices you use or herbs

pasta, chicken, bacon etc

melt a tin of anchovies in a frying pan, by gently frying (drained they are 1 syn per 100g / my tin was only 50g)
add cubes of chicken
pieces of bacon (fat off obviously)
add 1 chopped onion
fry til chicken cooked

add
2 red romano peppers, sliced
tin of chopped tomatoes
puree tomato

cook while pasta is boiling, I do it for 10 minutes

Drain and share out on plates
Serve the mix on top of pasta, scatter with fresh coriander and chilli flakes

this is how I do it, feel free to add your stuff

I use minced beef
1 onion
1 tin of chopped tomatoes
1 tin kidney beans
1 stock cube (I like knorr)
paprika
cayenne pepper
black pepper
chilli flakes
chilli powder

fry the onion and beef together, using spray oil

cook the tomatoes in a separate saucepan, melt the stock cube, add spices and onion and beef
cook for about 20 minutes

meanwhile cook your rice, boil water furiously with a little salt, before adding your rice, continue to boil furiously for 10 to 15 minutes, drain and rince with boiling water

Tomatoey casserole

simple to make, just bung it all in a casserole and leave it to cook, we cooked it for 3 hours

cubed beef
onion diced
carrots sliced
mushrooms chopped
peppers diced (I used 1 red and 1 yellow)
tin of chopped tomatoes
carton of passata
pinch of herbs de provence
pinch of oregano
paprika (teaspoon at least)

I cooked it at 180C/Gas Mark 4/350 F for 3 hours and served with plain white rice

simple cooked leg of lamb

very simple dinner tonight

leg of lamb steaks just roasted in the oven

served with tiny spuds,

mushrooms sliced and cooked with 'best of butter' spray, just a couple of sprays

carrots and broccoli

Simples
but yummy

Just one slice of toasted wholemeal bread with ham on it and tinned plum tomatoes

delicious chicken curry

this recipe is only 4 syns per person. its deliciously fragrant we love it

light coconut milk is 4 syns per 100ml -, a tin is 400ml so 16 syns per tin
but that is the only syns in this curry the rest is syn free and you dont have to use the whole tin

mix in a quite large bowl,

1 teasp of cayenne pepper
1 teasp of ground coriander
1 teasp of turmeric
1 teasp of ground cumin
mix well
using 4 boneless, skinless chicken breasts, chop them up to whatever size pieces you want and toss in the mix

Gently fry with spray oil and fry in a large frying pan until just cooked, put aside on a plate

in the same frying pan

Spray with spray oil
fry 1 onion diced until nice and brown
then add
2 garlic cloves, chopped or minced
1 or 2 chillies (we use 2 but we like hot)
1 inch of fresh ginger, minced
fry for just a minute or two
Add one tin of chopped tomatoes
1 tin of light coconut milk

Gently bring to simmer and cook for as long as you want to reduce sauce or have it straight away

we have with plain boiled rice
